Gajar ka halwa is an Indian dessert originating in the northern parts of the Indian subcontinent. The dessert was first discovered in Punjab and later gained prominence as an incredible dessert type in India, Pakistan, Bangladesh, and worldwide. Grated carrot is mixed with sugar, milk, and water and cooked slowly until the milk is absorbed. You can add dry fruits and milk solids (mava) for a richer taste.

Preparation Method for Gajar ka Halwa Recipe
Wash 500 gms or 1/2 kg of carrots. Peel their skin and finely grate them using a multipurpose grater.
On low heat, add 10 pistachios, 7-8 almonds, 15-20 raisins, 10-12 cashews to a pan. Fry them, adding a teaspoonful of ghee.
Take a deep cauldron or a suitable cooking utensil and heat milk over a mild or moderate flame.
Add grated carrots to boiling milk. Simmer carrots in milk until they start absorbing the milk and the milk turns thick.
Stir and cook the carrots on a medium flame. Keep a watch or continue stirring to prevent the burning of halwa at the bottom. Be super cautious towards the end, as the milk gets completely absorbed by the grated carrot.
Once the milk is fully absorbed, add half a cup of sugar and continue cooking the halwa. Once you add the sugar, the halwa shall turn gooey again. Keep stirring and cook until the sugar is wholly dissolved for a best gajar ka halwa recipe.
Finally, add a spoonful of ghee and fried nuts to the halwa. Cook for a minute and serve hot.
