  • Origin of Rasmalai

    Rasmalai found its origin in the eastern regions of the Indian subcontinent and is much loved in parts of India, Pakistan, and Bangladesh. Made using milk, nuts, sugar, and cardamom and spiced with saffron, the dessert has a distinct taste that scores high not only for a sensory experience but a luscious appearance that just makes it exceptionally tempting.

     

    What is Rasmalai? 

    Rasmalai is a spongy Indian delicacy made using milk, sugar, cardamom, saffron, and curdling agent. Flattened chenna or cottage cheese is prepared in sugar syrup and drenched in thick creamy Kesar-based milk, loaded with dry fruits like pistachios and almonds, and spiced with the rich taste of saffron and cardamom. The dessert is a must-have item on every Indian festive occasion and can be rightly touted as a mass favorite for its immersive taste that gets richer with every bite. 

    Preparation Method for Rasmalai Recipe

    Step 1:

    Boil 2 liters of milk in a container and keep stirring to avoid burning.

    Step 2:

    Add 2 teaspoons of vinegar to the boiling milk to curdle.

    Step 3:

    Add another teaspoon of vinegar so that milk starts separating water and gets fully curdled.

    Step 4:

    Once fully curdled, drain off the excess water using a cheesecloth and stop cooking. Rinse the cottage cheese using cold water. Let it hang in the cloth for 30 minutes.

    Step 5:

    Take the moist cottage cheese and knead gently to make crack-free cottage cheese balls. Flatten the balls slightly.

    Step 6:

    Once the flattened cottage cheese balls are prepared, keep them aside, covering them with a cloth.

    Step 7:

    In a large vessel, add 1½ cup sugar, 3 pods of cardamom, and 7 cup water.

    Step 8:

    Boil water for 5 minutes or until the syrup turns slightly sticky.

    Step 9:

    Slide in the flattened cottage cheese balls, keeping the flame on medium to high.

    Step 10:

    Cover and let it boil for 5-7 minutes or until the size of the cheese ball doubles. Once cooked, place it aside to cool.

    Step 11:

    Add 1 liter of milk, and saffron to a large cooking vessel. Boil it until the milk thickens slightly. Add ½ cup sugar and continue boiling until desired consistency is achieved.

    Step 12:

    Add ¼ tsp cardamom powder and finely diced nuts. Mix well. Your kesar-based milk is ready.

    Step 13:

    Squeeze off the sugar syrup from the cooked cottage cheese balls.

    Step 14:

    Drench them in the Kesar-based milk and let them soak for 4 hours.

    Step 15:

    Your delicious rasmalai is now ready. Serve chilled.
