Lauki Ka Raita Recipe

Lauki Ka Raita

By Neha Agrawal

Lauki Ka Raita, or Bottle Gourd Raita, is a simple and refreshing condiment sauce made with bottle gourd and yogurt. It adds a cool touch to your palate and can be served alongside pulao, biryani, or any Indian meal. Raita is a popular dip or sauce in Indian cuisine, made by combining yogurt with vegetables, fruits, and herbs. It can be prepared as a savory or sweet version. The savory raita has a mild and tangy flavor, which complements spiced dishes like biryani, pulao, kebabs, and curries.

  • Lauki, also known as bottle gourd, calabash, or opo squash, is the key ingredient in this raita. Lauki is a watery and juicy vegetable that brings a cooling effect, making it ideal for summer. It is packed with nutrients and minerals, and it is easy to digest. Lauki raita is a less common recipe, but it is often prepared in Punjabi households and has become a family favorite. Remember, Lauki is also referred to as ghiya in Hindi, dudhi in Marathi and Gujarati, and calabash or opo squash in English. Ghiya raita is another name for this delicious raita. It's worth noting that any dish made with bottle gourd is considered healthy as long as it's prepared by steaming, simmering, or sautéing, rather than deep-frying. During Indian summers, we are blessed with an abundance of vegetables and fruits like watermelons, oranges, lychee, guava, amla, palm fruit, coconut, musk melon, sugarcane, mango, pomegranate, various squashes, gourds, pumpkins (both white and yellow), and cucumbers. Including these cooling foods in your meals helps to keep your body refreshed and replenishes essential nutrients. So, try incorporating Lauki Ka Raita into your summer Indian meals for a delightful and cooling experience, and explore the wide array of fruits and vegetables on Quicklly during this summer season. Stay cool and enjoy the nourishment they bring to your body.

    Note & Pro Cooking Tips

    Note

You can also temper the raita with a tadka (tempering) of mustard seeds, cumin seeds, curry leaves, and dried red chilies for added flavor if desired. Heat a little oil in a small pan, add the tempering ingredients, and cook until the mustard seeds crackle and the spices release their aroma. Pour the tempering over the raita and mix well before serving.

Enjoy this refreshing and healthy Lauki Ka Raita to beat the summer heat!
