The dish originates from the Northern parts of the Indian subcontinent and is famous in Maharashtra, Gujarat, and Karnataka. Made using kneaded wheat flour stuffed with a filling of lentils, jaggery, cardamom, and ghee, Puran Poli is accompanied by Indian curries, chutneys, or curd. Making authentic desi Puran Poli is no big task. Made using simple ingredients that you can easily find in Quicklly's grocery store, the dish can be prepared at any time for your kids and family. Preparation Method for Puran Poli Recipe
To make the filling, soak the chana dal/Bengal gram in water for about 30 minutes. Drain the water and pressure cook the dal with 2 cups of water until it is soft and cooked. Drain any excess water and transfer the cooked dal to a bowl.
Add the grated jaggery, cardamom powder, and nutmeg powder to the cooked dal and mix well.
Over medium heat, add the dal-jaggery mixture to a pan. Stir constantly until the paste thickens & starts coming away from the sides of the pan. This should take about 10-15 minutes. Once done, remove from heat and let the mixture cool.
To make the dough, take the whole wheat flour in a mixing bowl, and add salt, oil, and enough water to make a smooth, pliable dough. Cover it and keep it aside for 20 minutes.
Divide the dough and filling into equal-sized balls. Take one ball of dough and roll it out into a small circle. Place one ball of filling in the center of the circle.
Fold the edges of the dough over the filling, pressing them together to seal the filling inside. Dust the stuffed ball with some flour and roll it out into a circle about 6-7 inches in diameter.
Heat a tawa over medium heat and place the rolled-out Puran Poli on the tawa and cook until it starts to puff up and small bubbles appear on the surface. Flip the Puran Poli over and cook the other side.
Apply some ghee on both sides of the Puran Poli and cook until it turns golden brown. Repeat the process for other dough and filling.
Serve the Puran Poli hot with ghee or milk.

Use good quality besan or gram flour for making Puran Poli recipe fillings. I prefer Ganesh or Aashirwaad Besan brands.
You must soak the chana dal for around 30-40 mins before cooking it to ensure it's soft and cooked well in time.
Add the jaggery to the mashed dal while it's still hot. This will help the jaggery melt and mix well with the dal, giving it a uniform sweetness.
To roll out the Puran Poli, dust the rolling board and the dough ball with flour. This will prevent dough from sticking to the rolling board, making it easier to roll out.
You can serve the Puran Poli hot, garnished with more ghee, or with some milk, chutney, or curd as accompaniments to enhance its taste.
